An invitation inside the lab.
For one evening only, a small group of guests will step behind the scenes at Minimal and experience how our pizzas are created, tested, refined, and reimagined.
Over the years, we have made thousands of pizzas. We have obsessed over fermentation, flour, hydration, fire, seasonality, and flavour combinations. Every dough recipe, every topping, and every detail has been challenged, adjusted, and tested again until it earned a place on our menu.
Now, for a limited number of guests, we are opening the doors to that process.
During this intimate hands-on workshop, you'll learn the philosophy behind contemporary Neapolitan pizza, work with our signature dough, explore the science of fermentation, and create pizzas using carefully selected seasonal Swedish ingredients.
You'll discover how we think about flavour, texture, and balance, and how local Nordic ingredients can transform a traditional pizza into something entirely new.
Throughout the day, we'll serve a curated selection of natural wines chosen to complement the ingredients and pizzas being prepared, offering a deeper understanding of the relationship between food, fermentation, and wine.
This experience is designed for curious dough lovers, passionate pizza bakers, wine enthusiasts, and anyone interested in creativity through dough.
Because meaningful learning happens in small groups, places are extremely limited.
This is not about following a recipe.
It's about learning how to think like a pizza maker.
