Take the first step towards making cheese yourself. For six hours you will cook your own grilled cheese together with Johan Rudh at Cityysteriet — and go home with both a ready-made cheese and the knowledge to continue at home.
Theory and practice are interspersed throughout the course, with room for questions along the way. You'll follow the process from souring milk all the way to salting finished cheese — and understand why every step matters.
You will learn, among other things, acidification, coagulation, breaking and stirring, absorption into molds and scalding.
No prior knowledge is required.
